Ingredients

  • 3.1 kg gammon joint
  • 1 large onion, halved
  • 2 carrots, roughly chopped
  • 2 bay leaves
  • 1.5 tsp black peppercorns
  • 8-10 whole cloves (optional, for extra flavour)
  • 3/4 cup Tropical Chilli Jam (Spicy Rye's)
  • 3 tbsp brown sugar
  • 1.5 tbsp Dijon mustard

    1. Place the gammon in a large pot and cover with water. Add the onion, carrots, bay leaves, and black peppercorns.

    2. Bring to a boil, then reduce to a simmer for about 3 hours (55 minutes for every 1kg), or until the gammon is tender.

    1. In a bowl, mix together the Tropical Chilli Jam, brown sugar, and Dijon mustard until smooth.

    1. Preheat your oven to 200°C (400°F). Remove the gammon from the pot and let it cool slightly.

    2. Carefully remove the layer of skin leave a layer of fat about ½ cm thick. Try not to make it too thin or too thick.

    3. Score the top layer of fat in a diamond pattern with a sharp knife. Optionally, stud each diamond with a clove.

    4. Brush the Tropical Chilli Jam glaze generously over the gammon.

    1. Place the glazed gammon in a roasting tray and bake for 35-40 minutes, basting with extra glaze halfway through, until the glaze is caramelised and golden.

    1. Allow the gammon to rest for 10 minutes before slicing. Serve warm or cold with extra Tropical Chilli Jam on the side if desired
