8 slices of your favourite bread, toasted to perfection

4 tbsp Carolina Reaper mayo

1/2 fresh lettuce, washed, dried and shredded

4 pieces fried chicken (breast or thigh, based on preference)

4 gherkins, sliced

4 slices of your favourite cheese (mozzarella, cheddar, or monterey jack work well)

4 tbsp Spicy Rye's Cognac and Honey Pepper Sauce

Optional: Salt and pepper to taste

Culinary torch (for melting cheese)

Directions
Prepare the Chicken:
If you're not using pre-made fried chicken, coat your chicken piece in seasoned flour, dip it in egg wash, and then back in the flour.
Fry in hot oil (around 350°F or 175°C) until golden brown and cooked through.
Drain on paper towels and set aside.
Assembly:
Start with one slice of toasted bread.
Spread ¼ of the Carolina Reaper mayo on the toast.
Place the fresh lettuce leaves over the mayo.
Lay the fried chicken piece on top of the lettuce.
Arrange the gherkin slices evenly over the chicken.
(Optional) Lay your chosen cheese slice on top of the gherkins.
(if using cheese) Use a culinary torch to gently melt the cheese until it's gooey and slightly golden. Ensure you move the torch consistently to prevent burning the cheese.
Drizzle ¼ of the Spicy Rye's Cognac and Honey Pepper Sauce on top.
Place the second slice of toast on top to complete the sandwich.
Serve: Using a serrated knife, slice the sandwich diagonally for easier eating. Serve immediately, perhaps with a side of chips or coleslaw.
