Ingredients
For the Chicken Thighs

7 bone-in, skin-on chicken thighs

2 tbsp olive oil

2 tbsp green seasoning

2 tbsp all-purpose seasoning
For Spicy Rye's Creamy Mushroom Sauce

2 tbsp butter

1 small onion, finely chopped

2 cups finely chopped mushrooms (white or cremini)

1 tbsp Original Hot Pepper Sauce

1 cup white wine
-
400ml heavy cream
-
1 tbsp green seasoning

Salt and pepper, to taste
For the Mashed Potatoes
-
700g russet potatoes, peeled and cubed

1/2 cup milk, warmed

1/4 cup unsalted butter, melted

Salt and pepper, to taste
Directions
Pat the chicken thighs dry with a paper towel, then rub in the olive oil, all-purpose season and green seasoning.
Place the chicken thighs in the air fryer basket, skin-side up, and cook for 20 minutes at 200°C (400°F)
While the chicken is cooking, prepare the creamy mushroom sauce. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes or until soft and translucent.
Add the mushrooms to the skillet and cook for 5-6 minutes until tender and browned. Stir in the green seasoning and cook for an additional 1 minute.
Add the wine then bring the mixture to a simmer. Cook for 3-4 minutes
Stir in the heavy cream, Original Hot Pepper Sauce, and season with salt and pepper to taste. Cook for an additional 2-3 minutes or until the sauce reaches the desired consistency.
Place the cooked chicken thighs back into the skillet with the sauce, and let them sit for a few minutes to absorb the flavours.
Meanwhile, prepare the mashed potatoes. Place the cubed potatoes in a large pot and cover with water. Bring to a boil, then reduce the heat to medium and cook for 15-20 minutes or until the potatoes are fork-tender.
Drain the potatoes and return them to the pot. Add the warmed milk, melted butter, salt, and pepper. Mash the potatoes until smooth and creamy.
To serve, place a generous scoop of mashed potatoes on each plate, then top with a chicken thigh and spoon the creamy mushroom sauce over the top. Enjoy!
